Wyndi, I just wanted to take a minute and let you know how much I rely on, and appreciate the delicious food you prepare!
Those who know me are well aware that I crave unhealthy food. But, I am happy to point out that your healthy nachos help to keep me away from the Taco Bell drive-thru!
Some other personal favorites from your weekly menus are: Beef/Bean Burritos, Pesto Shrimp Linguine, Pot Roast, Bacon Cheeseburgers, Beef Stroganoff, Baked Chicken, Shepherd’s Pie… several of which I can make more than 2 meals out of. And, thank you for making veggie-free versions for those of us that are a little particular!
I love that your meals are low calorie, low fat, low sodium, and consist of complex carbohydrates…and yet they are so filling and flavorful! With all of the running and strength training I do, carbs are a must. Also, I can eat as much as I want and fill up without that regretful feeling.
My busy schedule does not allow much time for cooking, and quite often I simply heat the food up in the container it comes in and carry it right out the door.
